Dojo Soy Sauce
How Two Expert Studies Took Dojo From Unproven Concept to Investor-Ready Premium Soy Sauce

84% concept purchase intent · 8.3/10 flavor · 144 vetted industry experts across two studies
About
Dojo is a premium Japanese soy sauce, barrel-aged 24 months by a nearly 200-year-old family brewery. Four clean ingredients, lower sodium, in a distinctive navy squeeze bottle at $9.99.
The Challenge
A first-time-in-category founder, weeks from a pre-seed raise, with a great story but no data and no traction to point to. Before committing to production, Dojo needed to prove the concept to investors and resolve the make-or-break questions: does anyone want soy sauce in a squeeze bottle, does the premium story land, and will the market pay $10+ against Kikkoman’s $4?
What We Did
Two expert studies by The Product Lab, concept then product.
May 2026, expert survey (n=50): validated the concept with 50 specialty-food professionals (buyers, founders, operators, consultants).
July 2026, expert sampling (n=94): put the actual bottle in 94 experts’ hands for a real taste test and premium read.
What the Studies Revealed
The concept cleared the bar. 84% purchase intent (category norm ~60%), a 7.2/10 “go,” 74% willing to pay $10+, and 96% open to flavored SKUs. Investor-ready data before a single bottle shipped.
The product overdelivered. Once experts tasted it, flavor scored 8.3/10 and 72% said it beats their home soy sauce. “Literally the best soy sauce I’ve ever tasted” recurred.
The studies pinpointed the one gap. It isn’t the liquid, it’s the bottle. The plastic reads “fun,” not premium (only 48% feel it premium), and the barrel-aged, 200-year story lives on the website, not the front label. The fix: make the pack tell the story the liquid already earns, then justify the $9.99 on-pack.
A clear go-to-market. Own “the everyday premium upgrade” (the Graza of soy sauce), sequence specialty and foodservice first, and lead with the origin story before mass.
Where Dojo Is Now
Dojo walked into its raise with an expert-validated concept and a library of named buyer and investor quotes, then used the sampling study to turn “is the product good?” into a precise, expert-ranked launch fix-list. They’re redesigning the label to carry the heritage story and closing the premium-cue gap before scaling into specialty retail.
“A rich, well-balanced flavor with deep umami and a clean finish, plus a story consumers can connect with.”
— Charles Butler, Lunds & Byerlys
“The product tastes great, but if I blend in the packaging, it drops to a one or two.”
— Jeff Smith, Director of Innovation, Blue Diamond Growers (the constructive read Dojo is now acting on)
